I love Christmas. I love everything about it. I love that stores start playing Christmas carols in October. I love putting my tree up in the first week of November. I don't care about the revolting commercialism of it all. Your judgement means nothing to me.
Anyhoo. IMO, the best thing about Christmas is how everything smells so wonderful. Evergreens. Cinnamon. Cloves. Spices. Nutmeg. It's all so, so good.
I made these cookies for an office bake sale, I believe. It was one of the first times I really nailed my royal icing consistency and got a crisp, white, clean line for piping.
The hunt for a good gingerbread cookie recipe is an ongoing struggle for me. I crave a cookie that bakes up slightly crispy around the edges, but soft and fluffy in the middle. I have yet to discover such a gingerbread recipe, but it doesn't stop me from trying every year.
P.S. It's important to remember that Christmas can be a difficult time of year for individuals and families struggling with any number of issues such as poverty, abuse, and mental health. Husband and I know how blessed we are in our own lives, and make a point of trying to help those less fortunate.
