Warning: It's been a rough few weeks and this post will likely start to veer towards the sentimental as I ramble on.
But if you're only in this for the baking, then GUESS WHAT - I finally found the perfect gingerbread cookie recipe! FINALLY!!!
So here's the scoop - I don't like crunchy cookies. There are lots of other foods that do a great job at being crunchy (celery, nuts, etc.). Cookies are not one of them. They should be soft and chewy. One should not have to work at eating a cookie. It should melt in your mouth with ease so that you have plenty of energy left to eat and digest more cookies. Gingerbread cookies are no exception.
I only cook gingerbread once or twice a year, at Christmas, which hasn't provided the opportunity to test a huge number of recipes. And there's nothing worse (ok, there are worse things, I'm just being dramatic) than being disappointed every time you bake rock-hard gingerbread cookies for your loved ones.
Anyway, getting to the point. This year I found a recipe that yeilds yummy, soft, chewy, delicious gingerbread cookies. Victory! Here it is. Enjoy.
WHY, you might ask, do I care so much about these gingerbread cookies? Well, I'll tell you.
I have a core group of high school friends who are some of the best and brightest ladies I know. While we were in University, we started a tradition of gathering at Christmas to bake and decorate gingerbread cookies (and drink wine). It wasn't a conscious thing, it just kind of morphed into something we decided to keep doing year after year.
We've been doing "Gingerbread", as we call it, for over ten years now and it's one of the things I look forward to most throughout the year. Some of us have moved to different cities, and some of us now have children, but regardless of time and schedules and distance we've held onto this tradition, and I think that's pretty darn special.
....time to put down the wine, I'm getting sappy. I love you guys!!
P.S. That handsome little guy is my godson! Isn't he the cutest? He loves cookies, too.
